Description

These spooky Mummy Brownies are a delicious and easy Halloween treat. Rich, fudgy brownies are frosted with vanilla buttercream and decorated with candy eyes to resemble mummies. Perfect for parties or a fun family baking activity!

Ingredients

  • ½ cup (115g) unsalted butter
  • 1 cup (170g) semi-sweet chocolate chips
  • ¾ cup (150g) granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon instant espresso powder (optional)
  • 2 large eggs
  • ¼ cup (30g) all-purpose flour
  • ¼ cup (25g) unsweetened cocoa powder
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup (115g) unsalted butter, softened
  • 1 ½ cups (190g) powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk
  • Candy eyes for decorating

Instructions

  1. Preheat oven to 350°F (175°C). Line and grease an 8×8 inch pan.
  2. Melt butter and ¾ cup chocolate chips. Stir in sugar, vanilla, and espresso powder.
  3. Whisk eggs and add to chocolate mixture. Mix dry ingredients separately.
  4. Gradually add dry to wet ingredients. Fold in remaining chocolate chips.
  5. Bake for 25-30 minutes, then cool completely.
  6. Beat butter and powdered sugar for frosting. Add vanilla and milk.
  7. Cut cooled brownies, pipe frosting, and add candy eyes.

Notes

Ensure the brownies cool fully before frosting to prevent crumbling. High-quality chocolate is key for a rich flavor. A stand mixer is helpful for making the frosting, but a hand mixer works too. If you don’t have espresso powder, a teaspoon of strong brewed coffee can be substituted.

What You’ll Need

Ingredients for Mummy Brownies
Gather your ingredients and get ready to bake!

Here’s what you’ll need to make these spooky-cute treats:

For the Brownies:

  • ½ cup (115g) unsalted butter
  • 1 cup (170g) semi-sweet chocolate chips, divided
  • ¾ cup (150g) granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon instant espresso powder (optional, enhances chocolate flavor)
  • 2 large eggs
  • ¼ cup (30g) all-purpose flour
  • ¼ cup (25g) unsweetened cocoa powder
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

For the Vanilla Buttercream Frosting:

  • ½ cup (115g) unsalted butter, softened
  • 1 ½ cups (190g) powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk

Decoration:

  • Candy eyes

From Start to Finish

Step 1: Bake the Brownies

Preheat your oven to 350°F (175°C). Grease and line an 8×8 inch baking pan with parchment paper, leaving some overhang on the sides for easy removal.

Step 2: Melt the Chocolate

In a microwave-safe bowl, melt the butter and ¾ cup of the chocolate chips together. Stir in 30-second intervals until smooth.

Step 3: Combine Wet Ingredients

Stir in the sugar, vanilla extract, and espresso powder (if using) into the melted chocolate mixture. In a separate bowl, whisk the eggs until bubbly, about 1 minute. Add the whisked eggs to the chocolate mixture and combine well.

Step 4: Combine Dry Ingredients

In another bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gently fold the dry ingredients into the wet ingredients until just combined. Be careful not to overmix. Stir in the remaining chocolate chips.

Step 5: Bake

Pour the batter into the prepared pan and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached.

Step 6: Cool

Let the brownies cool completely in the pan before frosting.

Step 7: Make the Frosting

While the brownies cool, prepare the frosting. In a stand mixer fitted with a whisk attachment (or using a hand mixer), beat the softened butter and powdered sugar together until light and fluffy. Add the vanilla extract and milk, and continue beating until smooth and creamy.

Step 8: Decorate

Once the brownies are completely cool, cut them into squares. Transfer the frosting to a piping bag or a ziplock bag with a corner snipped off. Pipe the frosting onto the brownies in a zigzag pattern to resemble mummy bandages. Attach two candy eyes to each brownie to complete the look.

Better-Than-Grandma Tips

Piping frosting onto brownies
Use a piping bag or ziplock bag for easy frosting.

Here are a few tips to help you achieve mummy brownie perfection:

  • Prep Your Pan: Grease and line your baking pan with parchment paper. This makes removing the brownies a breeze.
  • Chocolate Matters: Use quality chocolate for the best flavor. I prefer Ghirardelli semi-sweet chocolate chips.
  • Don’t Overmix: Overmixing the batter can result in cake-like brownies instead of the desired fudgy texture. Mix until just combined.
  • Cooling is Key: Let the brownies cool completely before frosting to prevent the frosting from melting and ensure clean cuts.
  • Get Creative with the Frosting: Don’t be afraid to get a little messy when piping the frosting. The imperfect “bandages” add to the mummy charm!

Try These Variations

  • Nutty Mummies: Fold in ½ cup chopped nuts, such as walnuts or pecans, into the brownie batter before baking.
  • Swirled Mummies: Create a marbled effect by swirling a tablespoon of melted white chocolate into the brownie batter before baking.
  • Double Chocolate Mummies: Use dark chocolate chips instead of semi-sweet for a richer chocolate flavor. Looking for other great dessert recipes? Check out our Desserts category.
  • Minty Mummies: Add a drop or two of peppermint extract to the frosting for a refreshing twist.
  • Coffin Brownies: Bake in a coffin-shaped pan and decorate accordingly for an extra spooky touch.

How long do Mummy Brownies last?

These brownies are best enjoyed within three days when stored in an airtight container at room temperature or up to five days in the refrigerator. For longer storage, you can freeze them for up to two months.

Can I use different types of chocolate chips?

Absolutely! You can replace the semi-sweet chocolate chips with dark chocolate chips, milk chocolate chips, or even white chocolate chips for a different flavor profile.

Where can I buy candy eyes?

The candy eyes are essential for the mummy look. You can usually find them at most grocery stores during the Halloween season, or at craft stores year-round.

Can I make my own frosting?

Yes, you can make your own buttercream frosting. I have a simple recipe on the blog. You can also use store-bought frosting, but homemade tastes fresher.

How to Serve

These brownies are almost too cute to eat!

These Mummy Brownies are delicious on their own but can be even more enjoyable with a few additions. Serve them slightly warm with a scoop of vanilla ice cream for a delightful contrast in temperatures and textures. A cold glass of milk also makes a classic pairing. You can find some great drink pairings in our Dinner section.
