Soft, chewy blue cookies packed with chocolate chips, Oreos, crunchy cookie pieces, and melty milk chocolate centers. These vibrant treats are a fun and delicious dessert for any occasion, bringing a touch of Cookie Monster magic to your kitchen.

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup packed light brown sugar
  • ¾ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • Blue food coloring (gel or paste)
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • 3 cups all-purpose flour
  • ¾ cup semisweet chocolate chips
  • ½ cup white chocolate chips
  • ¾ cup chopped Oreos
  • ¾ cup chopped crispy chocolate chip cookies
  • ¾ cup milk chocolate discs or chunks
  • Extra chocolate chips, white chocolate chips, chopped Oreos, and chopped crispy chocolate chip cookies for topping

Instructions

  1. Preheat oven to 350°F (175°C). Cream together butter, brown sugar, and granulated sugar until light and fluffy.
  2. Beat in eggs one at a time, then vanilla. Cream until pale and fluffy.
  3. Gradually add blue food coloring until desired shade is reached.
  4. Whisk together salt, baking powder, and flour. Gradually add to wet ingredients, mixing until just combined.
  5. Fold in chocolate chips, white chocolate chips, Oreos, and crispy cookie pieces.
  6. Flatten 2 tablespoons of dough, add chocolate discs, and wrap with more dough.
  7. Place on baking sheet, decorate with toppings, and bake for 10-12 minutes.
  8. Cool on baking sheet then transfer to wire rack.

Notes

For a deeper blue hue, chill the dough after mixing in the food coloring. If you don’t have milk chocolate discs, a chopped chocolate bar works well. Using a cookie scoop ensures uniform baking.

Ingredient Lowdown

An array of ingredients for Cookie Monster Cookies laid out on a table.
Gather your ingredients and get ready to bake some monstrously delicious cookies!

Here’s what you’ll gather to make these delightful Cookie Monster Cookies:

  • 1 cup (2 sticks) unsalted butter, softened: Room temperature butter creams best with the sugars, creating that perfect soft texture.
  • 1 cup packed light brown sugar: Adds moisture and a touch of caramel-like flavor.
  • ¾ cup granulated sugar: Contributes to the sweetness and helps create a crisp edge.
  • 2 large eggs: Binds the ingredients and adds richness.
  • 2 teaspoons pure vanilla extract: Enhances the overall flavor profile.
  • Blue food coloring: Use a gel or paste for vibrant, true-blue color.
  • 1 teaspoon salt: Balances the sweetness and brings out the other flavors.
  • 2 teaspoons baking powder: The leavening agent that makes these cookies rise.
  • 3 cups all-purpose flour: Provides structure to the cookie.
  • ¾ cup semisweet chocolate chips: Classic cookie monster touch.
  • ½ cup white chocolate chips: A lovely flavor and visual contrast against the blue.
  • ¾ cup chopped Oreos: A cookies-and-cream dream come true!
  • ¾ cup chopped crispy chocolate chip cookies: We’re talking those mini cookies. The extra crunch adds texture and a little extra something special.
  • ¾ cup milk chocolate discs or chunks: The glorious melty center. A chocolate bar works too.
  • Toppings: Extra chocolate chips, white chocolate chips, chopped Oreos, and chopped crispy chocolate chip cookies for decorating.

From Start to Finish

Step 1: Cream Together Butter and Sugars

Preheat your oven to 350°F (175°C). In a large bowl, cream together the softened butter, light brown sugar, and granulated sugar for about 1 minute until light and fluffy.

Step 2: Add Eggs and Vanilla

Beat in the eggs one at a time, followed by the vanilla extract. Continue creaming for another 3 minutes until the mixture becomes pale and even fluffier.

Step 3: Blue Hue It

Gradually add the blue food coloring, mixing until your desired shade of Cookie Monster blue is achieved. Remember, gel food coloring gives you the most vibrant, true-blue color.

Step 4: Dry Ingredients

In a separate bowl, whisk together the salt, baking powder, and all-purpose flour. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix!

Step 5: Mix-Ins

Gently fold in the semisweet chocolate chips, white chocolate chips, chopped Oreos, and chopped crispy chocolate chip cookies. Be careful not to over mix.

Step 6: Assemble the Cookie Monsters

Take about 2 tablespoons of cookie dough and flatten it slightly in your hand. Place 2-3 milk chocolate discs or chunks in the center. Wrap the edges of the dough around the chocolate, then top with another 2 tablespoons of dough to completely enclose the chocolate.

Step 7: Decorate and Bake

Place the dough balls on a baking sheet lined with parchment paper, leaving plenty of room for spreading. Gently press a few extra chocolate chips, white chocolate chips, chopped Oreos, and chopped crispy cookies onto the tops of each cookie. Bake for 10-12 minutes, or until the edges are golden brown.

Step 8: Cool and Enjoy

Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Then, grab a glass of milk and dive into these monstrously delicious cookies!

Test-Kitchen Tips

Freshly baked Cookie Monster Cookies cooling on a wire rack.
Cooling is crucial to let those melty centers set.
  • Room Temperature Butter: I always emphasize this, but truly, using room temperature butter is key to getting that light, fluffy texture. Check out our Delicious Korean Pancakes recipe that also features the importance of perfectly softened butter.
  • Chill Out: If your dough seems a little too soft, cover it and chill in the refrigerator for 30 minutes before scooping and baking. This will help prevent the cookies from spreading too much in the oven.
  • Don’t Overmix: Once you add the flour, mix until just combined. Overmixing develops gluten, which can result in tough cookies – nobody wants that!
  • Uniform Cookies: A cookie scoop is a great way to ensure all of your cookies are the same size, so they bake evenly.

Flavor Twists

  • Peanut Butter Cookie Monster: Add a ½ cup of creamy peanut butter to the dough for a nutty twist. You could also try drizzling some melted peanut butter over the finished cookies.
  • M&M’s Mayhem: Instead of white chocolate chips, use colorful M&M’s candies for a fun, rainbow effect. Be sure to check out our vibrant Rainbow Cake recipe for more color inspiration.
  • Double Chocolate Chunk: Skip the mini chocolate chip cookies and go for extra chocolate chunks in the dough and on top. Milk, dark, or a combination – it’s up to you!
  • Sprinkle Some Fun: Get creative with sprinkles! Add a pinch to the dough or sprinkle some over the tops of the cookies before baking. This works particularly well if you’re making these for a birthday or special occasion.

How do I know when the cookies are done baking?

The edges of the cookies should be golden brown, and the centers will still look slightly soft. Don’t worry, they’ll firm up as they cool.

Can I freeze the cookie dough?

Absolutely! You can freeze the dough for up to 3 months. Just scoop it onto a baking sheet, freeze until solid, then transfer to a freezer bag. Bake from frozen, adding a few extra minutes to the baking time.

My cookies spread too much. What did I do wrong?

The most common culprits are using too much butter or not chilling the dough if it’s too soft. Make sure your butter is properly softened (not melted), and chill the dough for about 30 minutes before baking if it’s sticky.

Can I use different types of chocolate?

Of course! Feel free to experiment with your favorite types of chocolate chips, chunks, or even a chopped chocolate bar for the melty center. Just make sure to use high-quality chocolate for the best flavor.
